I have been dabbling with Front’s Analytics via the API. 

One thing I cannot seem to find is what interval is being used for the time based metrics. My assumption is that these are seconds and that each of them is in the same interval but that is not specified in any of the documentation. 

Could someone help clear this up for me?

Yes, time-based metrics such as response or handle time would be in seconds.
